Crockpot Carribbean Jerk Chicken and other Sunday Happenings

We went to church this morning and there was a very cute and talented folk singer to sing his songs for our earth day celebration, his website is found at http://www.joereilly.org/music.html
and at www.myspace.com/joereillymusic But, he had songs I believe from his Planting Gardens cd that were both funny and insightful. Afterwards, Lea had a kids meeting and so they went to the nearest Coney Island. I joined with some of the adults and then they went back to the church for the meeting which has to do with the Mother’s Day celebration they’re planning. I’ll be helping out that Sunday.

I talked with my mother and sister via the phone and my mother and I thought that we should stay out the rest of July and leave August 3rd since I have stated in my notice to move that we would vacate the premises by July 31st, so we could stay at a cheap hotel for the 31st-August 3rd. I could pay my car payment, pay on my car insurance and then move down and hopefully by then we could have the apartment set up. Lea will be starting school just a few days after we get there. She’ll be going to…HIGH SCHOOL. OH MY GOD. They have 8th thru 9th in high school in one building, they have 10th-11th in another building, and 12th completely separate as well. This is shocking to me since she’s only going into the 8th grade…so high school hunh. But, with staying here until August that gives me time to finalize things here and it isn’t such a sudden move. So now I have three months instead of the two to get everything together. Tomorrow I’ll be calling to apartments asking for applications to be mailed and asking if they’ll have space in August. With it being a college town, I will have to get my application in early because August is when everyone will be moving in.

But, I feel really funny like I have so much time on my hands now that I’m without the chickens. I slept in past my normal time to turn on their lights and feed them which is 6:30-7:00. I came home today from church and there wasn’t anything to do but watch t.v. I guess I’ll have more time to spend on painting now. I am still working on the one I started the other day…doing it in bits and pieces. But I wanted to share a recipe with everyone that I found that is helping me with todays dinner.

I am cheating some since I have a bottle of jerk chicken sauce from Lawrey’s but I am going to be adding some of the ingredients to bring out a more authentic taste. With it starting to warm up finally here in Michigan, I will be using my table top grill and crockpot alot more than I did in the winter because they allow me to keep the oven off and the house cooler.

Crockpot Jerk Chicken

Ingredients:

1 large onion, cut into 8 pieces
1 teaspoon ground ginger or 1 tablespoon minced crystallized ginger
1/2 to 1 habanero pepper, seeded, deveined, and finely minced (wear gloves)
1/2 teaspoon ground allspice
2 tablespoons dry mustard
1 teaspoon freshly ground black pepper
2 tablespoons red wine or balsamic vinegar
2 tablespoons soy sauce
2 cloves garlic, crushed and minced
3 to 4 pounds chicken tenders

Preparation:

Combine onion and ginger in a food processor; process until finely chopped. Add remaining ingredients, except chicken, and pulse until well blended.
Place chicken in a 3 1/2- to 5-quart slow cooker and cover with sauce. Cover, set on low, and cook for 6 to 8 hours. or until chicken is tender (3 to 4 hours on high).

    Mmmmm…dinner sounds great! Enjoy that free time…even though I know you are still busy. :) I have one in highschool…she is a freshman this year. It is definitely interesting! :)

    Captainswife, in Michigan she’d still be in middle school but in Tennessee she’ll be in highschool. UGH! But she will also have to go to tutoring to catch up. When she was in Tennessee she learned multiplication and division in 1st grade. When we moved to Michigan she was in 4th grade and they were just getting to division. I was horrified. She will be behind everyone else so hopefully with all the work and tutoring she’ll need she can catch up it’ll keep boys and all that off her mind!!! I can hope!
